The legacy of South India's vast culinary repertoire is the legacy of spices. Pepper, Cardamom, Chilly, Nutmeg, Cinnamon and other spices are grown here.

 

The primary function of spices in food is to enhance its flavour. Tradition and experience have determined what combination of spices should be used for cooking in a particular regional style.Some spices are added to improve the texture of the food, other to introduce colour & seasoning. Besides enhancing the flavour and aroma of the food, spices have a physiological action beneficial to the digestive system.

 

At Maharani we have put together a selection, where spices make their presence felt across a variety of dishes, each true to its native origin. The combination of spices transforms each dish into a leaping maze of colour, flavour and aroma.

 

The menu is the research and development conducted by our team. With an accent in recapturing native cuisines, original style of preparations and local culinary tones, the menu reflects the legacy of the four Southern States in all its glory.
